These are my homemade vinegar-marinated carrots, or su-ninjin in Japanese. 🥕
I used to julienne the carrots with a peeler from a 100-yen shop, but this time I tried a julienne slicer I bought on Amazon for about 1,000 yen.
The carrots came out so beautifully that I couldn’t help taking a photo! This is such a simple way to enjoy carrots, so I’d like to share the recipe with you.
Ingredients
2 carrots
100 ml vinegar
1 tablespoon honey, or to taste
A pinch of salt
The glass storage jar in the photo is from a 100-yen shop. You can use sugar instead of honey, but I find that honey gives the carrots a milder sweetness.
Instructions
Julienne the carrots and place them in a container. Mix the vinegar, honey, and salt in a measuring cup, then pour the mixture over the carrots.
Since the liquid only comes about halfway up the carrots, I close the lid tightly and lay the container on its side, keeping the liquid away from the lid. Then I turn it occasionally so that all the carrots are evenly coated.
Keep the carrots refrigerated. I usually finish a batch in just a few days, as I have some with each meal or before meals. 😊
